Ingredients

1 Cup Butter

2 ¼ Cup All-purpose flour

¼ Cup Cocoa powder

1 teaspoon Salt

½ teaspoon Baking powder

½ teaspoon Baking soda

3 Tablespoons Glucose

1 Cup Brown sugar

1/3 Cup White sugar

1 piece Whole egg

1 teaspoon Vanilla

1 Kilogram Van Houten Professional Chocolate (cut into chunks)


Procedure

  1. In a bowl, cream the butter until the color turns pale yellow.

  2. Add in the sugars and glucose. Mix until well incorporated.

  3. Add in the eggs and vanilla. Mix until well incorporated.

  4. In a separate bowl, mix the flour, cocoa powder, salt, baking powder, and baking soda. Mix using a spatula until well incorporated.

  5. Add the dry ingredients to the butter mixture and then mix well.

  6. Add about half of the chocolate chunks into the batter and mix well.

  7. Line a baking pan with parchment paper and scoop the cookie dough, leaving about 1-2 inches of spacing for each to allow the dough to spread evenly.

  8. Roll each dough into a ball. Press the dough to flatten a bit and add the leftover chocolate chunks on top of each pressed cookie doughball.

  9. Bake for 18-20 minutes at 150° C (302° F).
