The Ultimate Buttercream Icing Solution: MotherBee’s Foolproof Recipe



Creating a stable icing masterpiece amidst scorching temperatures of 30-40 degrees Celsius (or even more) can feel like a culinary battle. Fear not, for I bring you MotherBee’s tried and true recipe, your steadfast ally in the fight against icing disasters.


Ingredients:

Version 1:

Shortening - 124g

Butter (tempered - let it reach at least 18-20°C) - 100g

Clear Vanilla - 5g

Confectioners sugar (sifted) - 450g

Fresh milk - 20g

*Cooked starch - 20g (5g cornstarch + 15g water) - ensure the starch is at room temperature before adding.


Version 2:

Shortening - 200g

Butter Oil substitute - 30g

Clear Vanilla - 5g

Confectioners sugar (sifted) - 450g

Fresh milk - 30g

*Cooked starch - 20g (5g cornstarch + 15g water) - ensure the starch is at room temperature before adding.


Note: You can opt for 100% shortening to achieve a pure white icing, but remember to use clear vanilla or introduce another clear flavor. Butter flavoring is an excellent choice.


Customize Your Consistency:

  • For a stiffer icing, add more icing sugar.

  • For a runnier consistency, introduce more milk or corn syrup.


Procedure:

  1. Begin by creaming the shortening, cooked starch, and butter in a mixing bowl using an electric mixer. Starting with the shortening is advisable since it’s harder than butter.

  2. Add the sifted icing sugar. Begin mixing on a low speed, gradually progressing to medium speed until your icing attains a fluffy, light consistency.

  3. Periodically, scrape the sides and bottom of the bowl to ensure an even mixture.

  4. Slowly introduce fresh milk and clear vanilla while continuing to mix on a slow speed.

  5. Once all the ingredients are well incorporated, increase the speed to achieve the desired consistency.

  6. Store your icing in a covered container.

  7. If refrigerated, this icing maintains its quality for up to 2 weeks.

  8. When taking it out of the chiller, rewhip the icing after slightly tempering it at room temperature.
