Pancakes, donning various monikers like flapjacks, hotcakes, or griddlecakes, have woven a delicious tapestry across nations. Each country weaves its distinct thread into this timeless culinary fabric. In the United States, fluffy buttermilk pancakes reign supreme, while France enchants with its delicate crepes.
The Dutch entice with tiny poffertjes, perfect for snacking, while Japan tantalizes palates with dorayaki, a pancake sandwich brimming with sweet red bean paste.
Upon relocating to New Zealand, I unearthed a treasure trove of pancake possibilities. Here, fresh and flavorful ingredients beckoned, inspiring me to craft my version of the perfect pancake. MotherBee’s Soft Fluffy Pancake weaves the essence of a classic pancake with a modern twist.
This recipe artfully combines all-purpose flour, cornstarch, and a dash of cinnamon, elevating the flavor and aroma. The magic, however, lies in the precise harmony of baking powder and baking soda, ensuring that irresistible rise in our pancake stacks. The inclusion of powdered milk imparts a delightful richness, resulting in a heavenly stack that melts in your mouth with each indulgent bite.
MotherBee’s Soft Fluffy Pancake Recipe:
Ingredients:
• 104 grams All-purpose flour
• 20 grams Corn starch
• 15 grams Powdered Milk
• 15 grams White sugar
• 8 grams Baking powder
• 3 grams Baking soda
• 3 grams Fine salt
• 1/4 tsp. Cinnamon
• 267 grams Liquid milk
• 8 grams Maple syrup
• 30 grams Melted butter
• 54 grams Eggs (medium-sized)
Instructions:
In a bowl, combine all-purpose flour, cornstarch, powdered milk, white sugar, baking powder, baking soda, fine salt, and cinnamon until well blended.
Add liquid milk, maple syrup, melted butter, and eggs to the dry ingredients. Mix until the batter is smooth and free of lumps.
Heat a lightly greased skillet over medium heat. Pour 1/2 cup of batter onto the skillet.
Cook each pancake until bubbles form on the surface and the edges set.
Flip the pancake and cook until the other side turns golden brown.
