Its origins can be traced to the 18th century, making it one of the oldest and most cherished pasta sauces in Italian culinary tradition.


Bologna, often referred to as "La Grassa" (The Fat) due to its culinary significance, is a city renowned for its deep-rooted food culture. Nestled in the Emilia-Romagna region, Bologna boasts a culinary heritage that dates back centuries. It is within this gastronomic epicenter that Pasta Bolognese was born.


The heart of Pasta Bolognese lies in its simplicity and authenticity. Traditionally, this beloved sauce was crafted from a handful of humble yet flavorful ingredients. Ground beef or pork served as the base, bringing a hearty and robust character to the sauce. These meats were simmered in a tomato-based sauce, which was enlivened by a subtle hint of wine or milk. This combination of ingredients, simmered together over time, created a sauce that was not only delicious but also deeply comforting.

In every steaming forkful of perfectly cooked pasta coated in that luscious meaty sauce, one can taste the centuries of tradition and the enduring appeal of Pasta Bolognese. It's a dish that invites us to savor not only its flavors but also the culinary heritage that brought it to our tables.


Pasta Bolognese Ingredients:

Preparation Time: 50-60 minutes

Serving size: 8 servings


1 kilo Spaghetti noodles

1/2 kilo Ground beef

350 grams Tomatoes, peeled

250 grams Tomato sauce

2 medium-sized Onions, chopped

1 clove Garlic, mined

10 sprigs Oregano leaves, chopped

10 pieces Basil leaves, chopped

1/8 teaspoon Cinnamon powder

6 tablespoons Olive oil

2 tablespoons Butter

1 teaspoon Salt (adjust to your taste)

1/4 teaspoon Black pepper, ground

Romano/Parmesan, grated


Tools and Equipment to Use:

  • Large skillet or saucepan

  • Wooden spoon for stirring

  • Pot for cooking pasta

  • Grater for Parmesan cheese


Procedure:

  1. Begin by finely chopping the onions and garlic.

  2. In a pot, heat 6 tablespoons of olive oil until very hot.

  3. Add the ground beef and continue stirring until all the water has evaporated, resulting in a beautifully brown and grainy texture. This process takes about 15 to 20 minutes.

  4. Add oregano, basil, cinnamon, pepper, and salt to taste. Stir for an additional 2 minutes.

  5. Add the peeled tomatoes (with their sauce from the can) and tomato sauce. Stir for 5 minutes, then let it boil. Remember to stir occasionally to prevent sticking on the bottom of the pot. The sauce will be ready when most of the water has evaporated, and it has thickened (approximately 15 minutes).

  6. In a casserole, bring water and salt (to taste) to a boil. Add unsalted butter to prevent sticking.

  7. Place the spaghetti in the boiling water and stir until all the noodles are covered. Cover the casserole but leave one side slightly open for the steam to escape.

  8. Once the spaghetti is ready, drain it in a strainer. Immediately pour ice water to stop the cooking process. Drain well and coat the noodles with melted unsalted butter or olive oil to prevent sticking.

  9. Serve immediately on a hot plate, placing the noodles on the plate and generously pouring the sauce on top.

  10. Top it all off with grated cheese of your choice, as mentioned above, and add a sprig of fresh basil for an appealing touch.

  11. Pair this delightful pasta with some freshly baked bread on the side.


While some Filipino family members prefer a sweeter sauce, I personally enjoy savory flavors. If desired, you may separate some sauce in a different pot and add brown sugar (melted in hot water) to taste. Let it boil for 1 or 2 minutes. As you can see, even this seemingly “simple” spaghetti Bolognese requires constant work, especially during the preparation of the ground beef sauce.


Storage Conditions and Shelf life:

Refrigeration: It's best to store leftover Pasta Bolognese in an airtight container in the refrigerator. Ensure that the container is sealed tightly to prevent moisture loss and odors from affecting the sauce.


When stored properly in the refrigerator at or below 40°F (4°C), Pasta Bolognese can typically remain fresh for up to 3 to 4 days. After this period, the quality may start to deteriorate, and it's advisable to consume it within that time frame.


Ambient Temperature: you can only keep the pasta at room temperature.

When stored at room temperature (below 70°F or 21°C) for a few hours (maximum of 4 hours), Pasta Arrabiata should be consumed promptly to ensure food safety and quality.


Reheat up to 76C prior to consuming. If it is sitting for more than 4 hours you have to discard the pasta. This is to avoid the risk of getting food poisoning.


Freezing (Long-Term Storage): If you want to extend the shelf life of Pasta Bolognese, consider freezing it. Place it in a freezer-safe container or freezer bags, removing as much air as possible to prevent freezer burn. Seal tightly and label with the date.


If you freeze Pasta Bolognese, it can remain safe to eat for an extended period. It's recommended to use it within 2 to 3 months for the best quality and taste. While it may be safe to consume beyond this time, the texture and flavor may deteriorate.

  1. Use good quality ground beef for a richer flavor.

  2. Simmer the sauce low and slow for the best results.

  3. Don't rush - the longer it simmers, the better the flavors meld.

  4. Adjust seasoning to your taste with salt and pepper.

  1. Overcooking the pasta - aim for al dente.

  2. Skipping the milk - it adds creaminess and balances the acidity.

  3. Not allowing the wine to reduce - this enhances the sauce's depth.

  5. Serving without Parmesan - it's the finishing touch that completes the dish.
