Ingredients:

• All-purpose flour - 1 1/4 cup

• Corn starch - 3 tablespoons

• Cocoa powder - 1 cup

• Baking soda - 1 teaspoon

• Baking powder - 1/2 teaspoon

• Salt - 1 teaspoon

• Liquid milk (warm) - 1/2 cup

• All-purpose cream - 1/4 cup

• White vinegar - 1 tablespoon

• Whole Eggs - 2 pieces (medium size)

• Dulce de leche - 1/4 cup

• Coconut oil - 1/2 cup

• Vanilla - 2 teaspoons

• Instant Coffee – 2 teaspoons

• White granulated sugar - 2 cups


Cooked corn starch – 1 tablespoon corn starch cooked in 3/4 cup water until thick (cool down to at least 4C)


Procedure:

  1. Pre-heat oven to 150°C and line three 9-inch round pans, set aside.

  2. Sift all-purpose flour, cornstarch, cocoa powder, baking soda, baking powder, and salt three times into a clean bowl, then set aside.

  3. Mix warm milk and cream together, then add white vinegar and leave the mixture to curdle for 15 minutes.

  4. Dissolve instant coffee in the curdled milk and cream mixture.

  5. Add eggs, dulce de leche, coconut oil, and vanilla to the coffee-curdled milk-cream mixture, and mix well until smooth.

  6. Prepare the cooked starch by mixing cornstarch and cold water, then cook in medium heat until the mixture thickens. Remove from stove and cool down to at least 4C, then set aside.

  7. Mix cooked starch together with the rest of the liquid mixture, then add all of the white granulated sugar to the liquid mixture. Mix on slow speed until sugar is fully dissolved.

  8. Add the sifted dry powder mix and continue mixing on the slowest speed until the mixture is homogenous and smooth (at least 3 minutes). Avoid overmixing to prevent gluten from developing.

  9. Pour batter into the previously lined pans, dividing it equally into the three pans.

  10. Bake in the pre-heated oven for 30-40 minutes or until a skewer inserted into the center comes out clean.

  11. Cool cakes in the cake pan covered with baking paper to keep the moisture inside.

  12. Refrigerate the cake for 3 hours or more.


Chocolate Ganache

Ingredients:

• Dark chocolate – 2 cups

• Thick cream – 1 cup

• Vanilla – 1 teaspoon

• Butter, melted – 1 tablespoon


Procedure:

  1. In a thick casserole, heat the cream up to 65°C, then remove from the stove.

  2. Pour the heated cream into the chopped dark chocolate, ensuring all chocolates are well submerged in the cream. Set it aside for 2-4 minutes.

  3. Slowly stir the chocolate and cream to completely melt the chocolate in the heated cream.

  4. Add melted butter and vanilla into the chocolate ganache, then stir slowly until homogenous and smooth.

  5. Refrigerate the ganache for 30 minutes or until it is thick enough to ice the cake.


Cake Assembly

  1. Remove cakes from the pan and remove the baking paper lining.

  2. Put one cake onto a cake board, then spread 1/2 cup of dulce de leche in the middle and spread it evenly.

  3. Add another cake on top of the first layer, then spread another 1/2 cup of dulce de leche on top of the second layer and spread it evenly.

  4. Put another cake on top to complete the cake layers. Chill the filled cake for 30 minutes.

  5. Ice the cake with chocolate ganache. Spread 1 cup on top of the cake and spread it evenly.

  6. Ice the sides of the cake with another cup of chocolate ganache, sealing the sides and smoothing out the edges.

  7. You can top it with chocolates on top or decorate the sides with whatever decorations you want to add.

  8. Refrigerate the cake and serve as required.
