Legend has it that the creation of the Lamington was a result of a culinary experiment. A French pastry chef named Armand Galland was faced with the challenge of repurposing leftover sponge cake. In a stroke of culinary genius, Galland cut the cake into squares, dipped them in a luscious chocolate mixture, and coated them with desiccated coconut. The result was an instant hit, and the Chocolate Lamington became a beloved treat in Australia and beyond.


Vanilla Sponge Cake Recipe Ingredients


• 1 3/4 cups (220g) all-purpose flour

• 2 teaspoons baking powder

• 1/4 teaspoon salt

• 1/2 cup (113g) unsalted butter, softened

• 1 cup (200g) granulated sugar

• 3 large eggs

• 1 teaspoon vanilla extract

• 1/2 cup (120ml) milk


Instructions:


  1. Preheat your oven to 350°F (175°C). Grease and line a square baking pan with parchment paper.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.

  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined after each addition. Be careful not to overmix.

  6. Pour the batter into the prepared baking pan, spreading it evenly.

  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.


Chocolate Lamington Recipe (with Dark Chocolate and Cocoa Coating):

Ingredients:


• 8 ounces (225g) dark chocolate, chopped

• 1/2 cup (50g) unsweetened cocoa powder

• 3 cups (360g) icing sugar

• 1/2 cup (120ml) milk

• 2 cups (160g) desiccated coconut


Instructions:


  1. Melt the dark chocolate in a microwave-safe bowl or using a double boiler on the stovetop, stirring until smooth.

  2. In a separate bowl, combine the cocoa powder, icing sugar, and milk, whisking until you achieve a smooth and thick chocolate mixture.

  3. Cut the cooled Vanilla Sponge Cake into equal-sized squares.

  4. Take one sponge cake square and dip it into the chocolate mixture, ensuring all sides are coated. Use a fork or spatula to lift it out, allowing any excess chocolate to drip off.

  5. Immediately roll the coated square in the desiccated coconut, making sure to coat all sides evenly. Gently press the coconut onto the chocolate coating to ensure it adheres well.

  6. Place the finished lamington on a wire rack to allow the chocolate coating to set. Repeat the process with the remaining sponge cake squares.

  7. Once the chocolate coating has hardened, your delectable Chocolate Lamingtons are ready to be enjoyed!
