Only two months into my stay in New Zealand, and the foodie in me is already in full swing, exploring the delightful world of baking, cooking, and culinary experiences.
The abundance of fresh ingredients here has sparked my creativity in the kitchen, and I’ve been joyfully whipping up recipes in our cozy studio unit in New Lynn, Waitakere City, Auckland.
Our little place is conveniently located, just 200 steps away from my workplace, and Papabee often looks out the window, watching me make my way home. Although we don’t have a refrigerator, we’ve found a clever way to keep our food fresh. As it’s winter now, I’ve discovered the magic of marinating fish with lemon and salt or just salt, and storing it in a well-sealed container.
Placing the marinated fish outside on our small veranda alongside the plants allows the 0°C temperature to work its magic, keeping the fish fresh until I’m ready to cook it later in the afternoon. It’s like having our own natural refrigerator, slowing down food-poisoning bacteria at this low temperature.
This recipe I’m sharing with you is one of the first creations that emerged from my culinary journey in New Zealand. Despite missing our two girls back in the Philippines, we are embracing the simplicity of life and relishing each moment.
So, here’s a delightful dish for you to try – the winning recipe of the month, chosen by the esteemed Superb Herb Company - Baked Fish with Lemon and Herb. I was overjoyed to discover that my creation was featured on their website, and as a reward, I won a dream come true – a whole collection of fresh herbs from them! Back in the Philippines, I had always dreamt of completing my collection of fresh herbs in pots, and now it’s finally within reach.
Baked Fish with Lemon and Herb Ingredients
• 1 Whole Big Fish
• 1 Lemon
• 6 cloves of fresh Garlic
• 1/2 tsp salt
• 1/8 tsp freshly ground black pepper
• 10 leaves of fresh basil
• 10 leaves of fresh oregano
• 1 stalk of fresh rosemary
• 2 tablespoons of extra virgin olive oil
• 1 tablespoon softened butter
Procedure:
Clean the fish thoroughly.
Pat dry with a paper towel.
Make slits on both sides of the fish and set it aside.
Chop finely (mince) garlic, olive oil, and the fresh herbs to make a paste.
Grease a baking dish with butter.
Insert the garlic and herb mix into the slits and inside the head of the fish.
Put the seasoned fish inside the baking dish.
Rub salt and pepper all over both sides of the fish.
Squeeze the lemon juice over the fish.
Cover with foil and seal.
Bake the fish at 150°C for 15-20 minutes.
Serve the fish immediately with mixed vegetables, either steamed or sautéed.
